| 200 g | icing sugar |
| 80 g | egg yolk |
| 160 g | egg white |
| 250 pieces | "00" flour |
| 7 g | baking powder |
| 15 g | rum 70° |
| 2 g | lemon zest |
| 1 half a pod | vanilla pods |
| 250 g | apples |
Method
Whip the butter with the icing sugar, add the yolks and the rum. Add the flour with the baking powder and the flavourings. At this point fold in the egg whites, whipped separately. Pour the mixture into the previously greased and floured moulds, level it and arrange the diced apples on top. Bake at 190 °C for about 12 minutes.
